The Slow Food Association, founded by Carlo Petrini in 1986, acts worldwide to promote food as a source of pleasure, culture, tradition, identity and way of life, respecting the environment and local traditions.
In 2004 the Association, in collaboration with Piedmont and Emilia Romagna Regions, inaugurated its first University of Gastronomic Sciences, the first one recognized by the Italian State. The site of this innovative educational project is located in Pollenzo, a beautiful town in the province of Cuneo.
In recognition of the prestige of Acquerello, the University in Pollenzo chose the Tenuta Torrone della Colombara as the learning centre for its course on in-depth analysis of rice.
